Brunch is one of the best meals ever invented. Several Atlanta restaurants do brunch reeeally well, like West Egg, Radial Cafe, Le Petit Marche, and Sun in my Belly. But there is something to be said about having a nice brunch at home.
Of course, you must have the right ingredients. That is key. But if you’ve got potatoes and onions for home fries, eggs and feta cheese for omelets, yogurt and strawberries, and, most importantly, champagne and orange juice for mimosas, you are in for an amazing, lethargy-inducing meal.
Take a peek at the below recipe for blueberry french toast. This is easy to whip up and will definitely kick your next homemade brunch up a notch.
- 1 loaf of French bread
- 6-8 large eggs
- 1 tsp. vanilla
- 1 ½ cups half & half
- 1 cup chopped pecans
- 2 cups blueberries
Cut bread in 1 inch slices.
Beat eggs with half and half & vanilla. Arrange bread in a buttered casserole dish and pour egg mixture over them and refrigerate over night.
Preheat oven 350 degrees. Turn the bread over and Sprinkle pecans, and blueberries over bread and bake 45-50 minutes or until lightly brown.
